A seafood feast or sizzling BBQ is the perfect choice to share with family and friends and can be a healthy swap to heavy, calorie-rich dishes this long weekend. This recipe from award-winning chef, Massimo Mele, is a cinch to make and will no doubt be a big hit for any occasion , any time of the year.

BBQ Split Prawns With Chilli, Oregano & Olive Oil

Christmas Seafood Recipes: BBQ Split Prawns


  1. 4 tiger prawns, butterflied
    1 tsp dried oregano
    1 tsp dried chilli flakes
    1 tsp chopped, fresh oregano leaves
    1 tab chopped parsley
    1 garlic clove, chopped finely
    1 lemon, juiced
    1 tab chopped chives
    ½ cup extra virgin olive oil
    Sea salt and cracked black pepper to season


  1. Mix the olive oil with the all the ingredients and seasoning and brush over the flesh of the prawns.
  2. Place the prawns shell side down on the BBQ and cook for three minutes then turn over and cook for a further 30 seconds.
  3. Take off the hot plate and brush more of the dressing over the prawn flesh and serve.
