Cinnamon Oatmeal Waffles

  1. 1 3/4 cups whole wheat flour
    1/4 teaspoon salt
    1 tablespoon baking powder
    2 cups rolled oats
    3 tablespoons flaxmeal
    2 tablespoons ground cinnamon
    1 tablespoon brown sugar
    2 large eggs
    1 cup yoghurt (I used plain Greek)
    1 cup skim or soymilk
    1/4 cup natural nut butter, melted
    Cooking spray (for waffle iron)


  1. Pre-heat the waffle iron to medium-high. In a large bowl, mix together the first seven ingredients (flour to sugar). In a small bowl, combine the eggs, yoghurt, and milk and whisk to combine. Add in nut butter. Pour the wet mixture into the dry and mix gently.
  2. Spray the waffle iron with the cooking spray. Pour 3/4 cup or so of the batter into the middle of the waffle iron. Bake until golden brown and serve with maple syrup and fresh fruit. Makes six waffles.
