"Paleo is all the hype at the moment, but I think the next big thing will be savouring slow food. It used to be all about quick and easy, but people are starting to realise that the more time you take to prepare, and appreciate food, the better the quality of the food and the more your body will benefit as well. It sort of links to conscious eating, having more of a connection with food origins and appreciating the process. It also means that the ingredients are given the attention they deserve."
